Review of practices undertaken within the global sheep meat supply chain to extend shelf-life

Tender description

HCC requires a supplier to provide in-depth research into practices undertaken throughout global sheep meat supply chains that support extended shelf-life of lamb. This work will include a potential mix of in-person and remote interviews with those within the supply chain. The research should include a capture of how different practices have been adopted and implemented with the aim of extending lamb shelf-life. This would include reviewing animal cleanliness guidelines, plant design, moisture and temperature control and packaging techniques.
