Dún Laoghaire-Rathdown County Council proposes to award a commercial concession for the operation of the Pavillion Café/Bistro at the Peoples Park, Dún Laoghaire for a period of five years, with the option to extend for a further two periods of one year each (maximum seven years in total). The concessionaire shall have an exclusive right to provide the service in the defined catering area. The concessionaire will be expected to achieve their earnings by maximising trade through pro-active and commercial management, and as such are expected to be proactive in promoting the café and the Peoples Park. Overall, the emphasis will be on providing a range of high quality, distinctive, fresh and well presented meal and snack options, using quality artisan or locally sourced ingredients where possible, complimented by a range of alcoholic and non-alcoholic beverages including hot and cold drinks. The operator must provide a range of menus that cover extended all day use (breakfast, lunch and all day snacks/beverages) as well as a gourmet evening bistro menu. The food and beverage offer must have empathy with the building and surrounding environment and seasonality.
