Irish Prison Service proposes to engage in a competitive procedure for the establishment three frameworks for the provision of Site food audits and Kitchen efficiency Audit for the Irish Prison Service in the following Three lots: • Lot 1 – IPS Kitchen Audits • Lot 2 – IPS Catering Supplier Audits • Lot 3 – IPS Kitchen Efficiency Audits Lot 1: IPS Kitchen Audits The successful tenderer will be required to carry out annual on-site audits covering catering/ hygiene standards in each of the Prisons and Places of Detention and in the Prison Service Training Centre. The audit is based on key criteria for professional catering standards in the kitchen, stores and ancillary areas. Lot 2: IPS Catering Supplier Audits The successful tenderer will be required to carry out, as requested, IPS catering supplier hygiene Audits. The audit is based on key criteria for food processing and distribution, within primary processing plants, secondary agents and distribution agents as appropriate. Lot 3: IPS Kitchen Efficiency Audits The successful tenderer will be required to carry out, as requested, catering efficiency audits of prison kitchens to include order and stock control, adherence to menu and portion control is required.
