Tender description

The Ministry of Justice (MoJ) which includes HM Prison Service, and is referred to as the Authority, has a requirement for the provision of training in food nutrition and health/hygiene for catering staff, delivered on a prison college training site. This will predominantly involve the training courses on: Level 3 (Intermediate) Food Safety; Level 4 (Advanced) Food Safety; Level 3 (Intermediate) Hazard Analysis Critical Control Points (HACCP) Food Safety System; Level 3 (Intermediate) Food Safety Management Refresher Course; Level 3 (Intermediate) Nutrition for Healthier and Specialist Diets”. The qualifications in food hygiene and food safety will ensure that staff are trained in accordance with Regulation (EC) No 852/2004 of the European Parliament. They also ensure NOMS meet the expectations of wider Government agencies such as Food Standards Agency and Department of Health. Approximately 1 050 caterers are employed within public prison establishments who under the overall control of the NOMS Catering Manager manage the ‘food business’ through the identification and control of hazards to food safety and the correct supervision of the food delivery processes within individual prison environments.
